this one’s a real gem. sourced from smallholder farmers in southern ethiopia this white honey–processed lot brings a delicate clean and expressive cup. it leans floral and bright in that classic Yirgacheffe way, but with this super chill sweetness running through with some smooth dark-chocolate depth.
a big part of what makes this coffee so interesting is the white honey process, which you almost never see in Ethiopia. most Ethiopian coffees are traditionally washed or natural — so this lot is kind of a treat. after the cherries are depulped, farmers leave just a very thin layer of mucilage on the parchment before drying. compared to yellow or red honey, white honey uses minimal mucilage and faster drying, which keeps the cup bright, delicate, and less funky. think washed-coffee clarity with a gentle glow.
